Recipe: Cilantro Lime Grilled Shrimp

INGREDIENTS
- 2 pounds large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 garlic cloves, grated
- 1 bunch fresh cilantro, finely chopped
- 2 limes, juiced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
INSTRUCTIONS
- Combine shrimp and remaining ingredients in a large bowl toss well to evenly coat the shrimp with the marinade.
- Refrigerate shrimp in the marinade for 20-30 minutes while you prepare the pasta salad.
- Heat grill (or a grill pan) over medium-high heat.
- Pierce the shrimp with skewers and grill for 2-3 minutes per side, until the shrimp is fully cooked.
SERVES: 4-6
