Recipe: Cilantro Lime Grilled Shrimp

INGREDIENTS

  • 2 pounds large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 garlic cloves, grated
  • 1 bunch fresh cilantro, finely chopped
  • 2 limes, juiced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
     

INSTRUCTIONS

  1. Combine shrimp and remaining ingredients in a large bowl toss well to evenly coat the shrimp with the marinade.
  2. Refrigerate shrimp in the marinade for 20-30 minutes while you prepare the pasta salad.
  3. Heat grill (or a grill pan) over medium-high heat.
  4. Pierce the shrimp with skewers and grill for 2-3 minutes per side, until the shrimp is fully cooked.


SERVES: 4-6
