Recipe: Crispy Tofu Street Tacos

CRISPY TOFU STREET TACOS

INGREDIENTS

  • 1 tablespoon avocado oil
  • 1 sweet onion diced, divided
  • 1 chipotle pepper in adobo, chopped
  • 1-2 tablespoons adobo sauce from the chipotle can
  • 1 14-ounce block super firm tofu
  • 2 tablespoons taco seasoning (see ingredients below)
  • ½ cup chopped cilantro
  • 2 avocados, sliced
  • Shredded green cabbage
  • Lime wedges
  • 16 street-style corn tortillas
     

INSTRUCTIONS

  1. Heat the oil in a skillet over medium heat. Add half the onion and cook for two minutes. Add in the chipotle pepper and adobo sauce and stir to combine. Using a box grater, shred the tofu and add to the skillet. Sprinkle in the taco seasoning and stir well.
  2. Spread the tofu in an even layer and allow it to sit untouched for two minutes. Flip and spread in an even layer for another two minutes. Continue flipping every few minutes until the tofu is your desired crispiness – about 10 minutes.
  3. Meanwhile, combine the other 1/2 of the diced onion and cilantro in a bowl. Set aside.
  4. Heat the tortillas over an open flame or in a dry skillet.
  5. To assemble, layer two tortillas and top with tofu mixture, avocado, cabbage, and the onion and cilantro mixture. Serve with lime wedges.


TACO SEASONING

  • 2 tablespoons chili powder
  • 4 teaspoons cumin
  • 2 teaspoons coriander
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • ¼ teaspoon chipotle powder
