Recipe: Dumpling Smash Tacos With Dipping Sauce

INGREDIENTS

  • 4 tablespoons tamari or soy sauce
  • 2 tablespoons chili oil
  • 4 teaspoons black vinegar
  • 2 teaspoons sesame oil
  • 2 garlic cloves, minced
  • 5 green onions, finely chopped, divided
  • ¼ cup chopped cilantro, divided
  • 1 lb ground chicken or pork
  • 3 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons tamari or soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 1 tablespoon Chinese black vinegar (or rice vinegar)
  • ¼ teaspoon white pepper
  • 12 mini tortillas
  • Avocado oil
  • Sesame seeds


INSTRUCTIONS

  1. In a small bowl, make the dipping sauce by stirring together 4 tablespoons tamari, chili oil, 4 teaspoons black vinegar, 2 teaspoons sesame oil, 2 minced garlic cloves and 2 chopped green onions. Set aside.
  2. In a medium bowl, mix the remaining green onions, 3 tablespoons chopped cilantro, ground chicken, remaining garlic, ginger, remaining tamari, remaining sesame oil, fish sauce, remaining black vinegar and pepper. Mix to combine, making sure all the seasoning is evenly distributed.
  3. Spoon a couple of tablespoons of the filling onto each mini tortilla and use a spoon to press the mixture into a thin layer covering the tortilla to the edges.
  4.  Heat a large skillet over medium-high heat and add a drizzle of oil.
  5. Place the topped tortillas, dumpling mixture down, onto the pan and use a spatula to press the tortilla into the pan. Cook for four minutes or until mixture is cooked through, then flip the tacos and cook for another minute, just to crisp up the tortilla. Remove from the pan, then repeat with the rest of the tortillas.
  6. Serve topped with remaining tablespoon of cilantro and a sprinkle of sesame seeds.
  7. Serve with a small drizzle of the dumpling sauce and more on the side for dipping.
