Recipe: Rosemary Roasted Sweet Potatoes

Rosemary Roasted Sweet Potatoes prepared on a plate and garnished with fresh herbs.

INGREDIENTS

  • 2 pounds sweet potatoes, cubed
  • 1 tablespoon avocado oil
  • 1 tablespoon chopped fresh rosemary leaves
  • ¾ teaspoon garlic powder
  • Salt and pepper, to taste
  • ¼ cup grated parmesan cheese

INSTRUCTIONS

  1. Preheat oven to 400 degrees F.
  2. Toss the sweet potatoes with oil, rosemary, garlic, salt, and pepper.
  3. Spread on a parchment lined baking sheet and bake for 10 minutes, stir, and return to oven for another 10-15 minutes or until tender.
  4. Sprinkle with parmesan while hot and serve immediately.
