Recipe: Zesty Black Bean Taco Salad

Zesty Black Bean Taco Salad

INGREDIENTS

  • 1 can of black beans, rinsed
  • ¼ cup salsa of choice
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • ½ head romaine, chopped
  • ¼ cup store-bought pico de gallo
  • 2 large radishes, sliced
  • ½ cup store-bought mixed chopped veggies(cabbage, carrots, etc.)
  • 2 tablespoons chopped cilantro
  • 1 green onion, chopped
  • 2 lime wedges
  • 2 tablespoons plain Greek yogurt
  • 2 handfuls tortilla chips
     

INSTRUCTIONS

  1. In a medium bowl, mix beans, salsa, cumin, and season to taste with salt and pepper.
  2. Divide romaine between two bowls and top each with ½ of the bean mixture, pico de gallo, radishes, chopped veggies, cilantro, green onions, lime wedges, Greek yogurt, and tortilla chips.
