Recipe: Zesty Black Bean Taco Salad

INGREDIENTS
- 1 can of black beans, rinsed
- ¼ cup salsa of choice
- ½ teaspoon ground cumin
- Salt and pepper, to taste
- ½ head romaine, chopped
- ¼ cup store-bought pico de gallo
- 2 large radishes, sliced
- ½ cup store-bought mixed chopped veggies(cabbage, carrots, etc.)
- 2 tablespoons chopped cilantro
- 1 green onion, chopped
- 2 lime wedges
- 2 tablespoons plain Greek yogurt
- 2 handfuls tortilla chips
INSTRUCTIONS
- In a medium bowl, mix beans, salsa, cumin, and season to taste with salt and pepper.
- Divide romaine between two bowls and top each with ½ of the bean mixture, pico de gallo, radishes, chopped veggies, cilantro, green onions, lime wedges, Greek yogurt, and tortilla chips.
