Recipe: Beautiful Braised Kale

INGREDIENTS
- 1 tablespoon avocado oil
- 1 small onion, sliced in half moons
- Salt and pepper
- 1 large bunch of curly kale, stems removed
- ¼ cup water
- 2 teaspoons apple cider vinegar
INSTRUCTIONS
- Heat oil in a large skillet with a lid over medium-high heat and add onions.
- Season with salt and pepper and saute for three to five minutes or until the onions begin to soften.
- Add kale and toss to incorporate with the onions.
- Add water, cover with the lid, and cook for five to seven minutes, stirring periodically to braise and wilt the kale.
- Remove the lid and allow to cook for a minute or so more, if needed, to evaporate most of the water.
- Season with vinegar, toss to coat and serve
