Recipe: Hasselback Parmesan Potatoes

Hassleback Parmesan Potatoes

INGREDIENTS 

  • 4 medium Yukon gold potatoes
  • Avocado oil spray
  • Flaky salt
  • Freshly ground black pepper
  • ½ cup grated Parmesan cheese*
  • 1 teaspoon fresh thyme leaves only

INSTRUCTIONS

  1. Preheat oven to 425 degrees F.
  2. Make thin cuts (about ¼”) almost all the way through the potato, leaving the bottom intact.
  3. Transfer prepared potatoes to a baking dish and spray liberally with avocado oil.
  4. Season with flaky sea salt and freshly ground black pepper.
  5. Bake in the oven for 45-65 minutes or until tender.
  6. Remove from oven, sprinkle with Parmesan cheese*, and return to the oven until cheese is melted – about five minutes more.

*Use vegan Parmesan to make this a vegan dish.
