Recipe: Hasselback Parmesan Potatoes

INGREDIENTS
- 4 medium Yukon gold potatoes
- Avocado oil spray
- Flaky salt
- Freshly ground black pepper
- ½ cup grated Parmesan cheese*
- 1 teaspoon fresh thyme leaves only
INSTRUCTIONS
- Preheat oven to 425 degrees F.
- Make thin cuts (about ¼”) almost all the way through the potato, leaving the bottom intact.
- Transfer prepared potatoes to a baking dish and spray liberally with avocado oil.
- Season with flaky sea salt and freshly ground black pepper.
- Bake in the oven for 45-65 minutes or until tender.
- Remove from oven, sprinkle with Parmesan cheese*, and return to the oven until cheese is melted – about five minutes more.
*Use vegan Parmesan to make this a vegan dish.
