Recipe: Quinoa Tabbouleh

INGREDIENTS
- 1 cup quinoa, cooked
- 1 cup finely chopped parsley
- ½ cup finely chopped arugula
- 1 red onion, minced
- 1 roma tomato, chopped
- 1 lemon, juiced and zested
- 1 tablespoon olive oil
- Salt and Pepper, to taste
INSTRUCTIONS
- Toss all ingredients together and taste. Add salt and pepper as needed.
