Whipped Cream Cottage Cheese Breakfast Bowl with avocado, tomatoes, and more

INGREDIENTS

  • ½ cup cottage cheese
  • 1-2 soft-boiled eggs 
  • ¼ avocado, thinly sliced
  • ½ cup chopped cucumber
  • ½ cup cherry tomatoes, halved
  • Everything bagel seasoning
  • Pink pickled onions
  • 1 tablespoon chopped cilantro

INSTRUCTIONS

  1. Blend cottage cheese in a blender or food processor until smooth.
  2. Spread creamy cottage cheese on a plate or bowl.
  3. Slice eggs in half and arrange on top, followed by avocado, cucumber, and tomatoes. 
  4. Season with everything bagel seasoning and top with pickled red onions and chopped cilantro.

SERVES: 1
