INGREDIENTS
- ½ cup cottage cheese
- 1-2 soft-boiled eggs
- ¼ avocado, thinly sliced
- ½ cup chopped cucumber
- ½ cup cherry tomatoes, halved
- Everything bagel seasoning
- Pink pickled onions
- 1 tablespoon chopped cilantro
INSTRUCTIONS
- Blend cottage cheese in a blender or food processor until smooth.
- Spread creamy cottage cheese on a plate or bowl.
- Slice eggs in half and arrange on top, followed by avocado, cucumber, and tomatoes.
- Season with everything bagel seasoning and top with pickled red onions and chopped cilantro.
